Cheesy Garlic Butter Chicken
Ingredients
- 4 (8-oz. each) boneless, skinless chicken breasts
- 3/4 tsp. kosher salt
- 1/2 tsp. black pepper
- 1/3 cup (about 1 1/2 oz.) all-purpose flour
- 4 Tbsp. (2 oz.) unsalted butter, divided
- 6 large garlic cloves, finely chopped (about 2 Tbsp.)
- 1 Tbsp. chopped fresh chives
- 2 Tbsp. fresh flat-leaf parsley, divided
- 3/4 cup chicken broth
- 1/2 cup heavy whipping cream
- 2 oz. Parmesan cheese, grated (about 1/2 cup), plus more for garnish
- 1 oz. low-moisture mozzarella cheese, shredded (about 1/4 cup)
Directions
Sprinkle chicken evenly with salt and pepper. Place flour in a shallow dish; dredge chicken lightly in flour, shaking off excess. Discard remaining flour.
Heat 2 tablespoons of the butter in a large skillet over medium-high. Add dredged chicken; cook, turning once, until golden and a thermometer inserted into thickest portion registers 160°F, 6 to 7 minutes per side. Transfer chicken to a plate, do not wipe skillet clean. Tent chicken with aluminum foil to keep warm.
Remove skillet from heat and let cool for 2 minutes. Add remaining 2 tablespoons butter to skillet, and let melt. Add garlic, chives, and 1 tablespoon of the parsley; cook over medium, stirring constantly, until fragrant, about 30 seconds.
Add chicken broth; cook over medium, scraping up browned bits from bottom of skillet, until simmering, 2 to 3 minutes. Reduce heat to low. Stir in cream, Parmesan, and mozzarella; cook, stirring constantly, until cheeses are melted and sauce is smooth, 3 to 5 minutes.
Return chicken to skillet; cover and simmer over low until heated through, about 5 minutes.
Remove from heat. Sprinkle with remaining 1 tablespoon parsley and garnish with additional Parmesan. Serve immediately.
