Pecan Shortbread Cookies - Mary Mahaffa

Ingredients
- 1 cup unsalted butter, room temperature
- 1/2 cup plus 2 tablespoons sugar (reserve a little for sprinkling)
- 1/2 teaspoon pure vanilla extract
- 1 3/4 cups all-purpose flour
- Pinch of salt
- 2 1/2 ounces pecan halves, toasted
- 2 teaspoons pure almond extract
Directions
- Cream butter and sugar together in the bowl of an electric mixer for 3–4 minutes, until mixture is light in color.
- Add vanilla extract.
- Add flour, salt, pecans, and almond extract; mix just until combined and pecans start to break up slightly.
- Wrap dough in plastic wrap and refrigerate at least 1 hour or overnight.
- On a lightly floured surface, roll dough to 1/4-inch thickness.
- Using 2 1/2-inch cookie cutters, cut cookies and place on parchment-lined baking sheets.
- Refrigerate cut cookies for 1 hour more.
- Sprinkle cookies with remaining sugar.
- Bake at 325°F for 15–20 minutes, until set but not browned.
Notes
